Iberostar Hotels & Resorts says its use of artificial intelligence (AI) has helped trim the fat off its food service by significantly reducing food waste this year and furthering its goals of achieving a “waste-free future” by 2025.
The resort chain says Winnow AI technology has now been installed in 48 of its 100-plus Iberostar hotels globally and has enabled it to “save” 735,000 meals in the first half of the year, while cutting food waste by 28% overall.
The company has also achieved an 11% reduction in waste weight and saved
1,264 tons of CO2, which translates to 2,500 tons of CO2e reduced per
year – the equivalent of 6.4 million miles driven by a passenger car (source: EPA

As part of its ambitious and pioneering ‘Wave of Change’ sustainability plan, Iberostar Hotels & Resorts aims to save 1,600 tons of food waste per year, equivalent to 5.3 million meals.
“Our partnership with Winnow is a testament to our commitment towards a waste-free future,” says Iberostar Global Sustainability Director, Megan Morikawa. “It is truly inspiring to see our chefs embrace the program and create tangible change. This achievement reinforces Iberostar’s position as a leader in creating a sustainable travel industry.”
Iberostar says its milestones demonstrate the vital role the hospitality industry can play in addressing climate change and creating a sustainable and positive tourism.
